Ingredients

1/2 cup heavy cream
1/3 vanilla bean, split and scraped, seeds reserved
1 1/2 lb (about 3 large) baking apples, such as Golden Delicious, peeled, cored, and thinly sliced
1/3 cup sugar
FOR THE CAKE:
3/4 cup (1 1/2 sticks) unsalted butter, softened, plus more for greasing
2 cups all-purpose flour, plus more for dusting
2 1/2 tsp baking powder
1/4 tsp kosher salt
1/4 cup dark rum
1 cup sugar
3 large eggs, lightly beaten
FOR THE TOPPING:
1 tbsp sugar
1/4 tsp ground cinnamon
